Holly Fudge

Yield: Makes 3 dozen



Coat an 8-inch square baking dish with nonstick spray.

In a large saucepan, bring sugar, butter, heavy cream and salt to a boil, stirring frequently. Allow to boil 5 minutes, stirring constantly. Remove from heat and slowly add confectioners sugar and vanilla. Stir until smooth and well combined. Stir in cherries and evenly distribute through mixture. Spoon into greased baking dish and refrigerate 1 hour. Cut into squares and serve.
